A glass of my Harvest ’05 Apple Honey Wine (traditionally known as Cyser)
Recipe:
Pick and juice 70 pounds of mixed apples (I don’t have an apple press – yet)
Dissolve 8 pounds of fresh, unpastuerized honey in 4 litres of spring water
Mix together and add spring water to 5 gallons
Add: 2.5 tsp pectic enzyme, 1.25 tsp tannin, 2.5 tsp mallic acid, 2.5 tsp tartaric acid, and 2.5 tsp yeast nutrients
Mix and let sit 24 hours then add one packet of wine yeast
Ask Dionysus to bless the wine.
Rack and sulfite after 3 weeks
Rack every 3 months thereafter for one year.
Bottle and enjoy.
